Every laksa seller knows the two problems that come with the dish. The first is labour: a proper laksa base means hours of pounding and frying rempah, and the person who knows the recipe becomes the single point of failure for the whole menu. Sarawak laksa paste is the cooking base for Sarawak laksa, the Kuching-born noodle soup built on a spiced paste of chili, aromatics and sambal belacan, the local fermented shrimp paste, mellowed with coconut milk and typically served over rice vermicelli with prawns, shredded chicken, beansprouts and a squeeze of lime. The paste carries the spice work, so the kitchen only simmers the laksa soup from chicken stock and paste, then garnishes.
