Why do drink counters pour syrup instead of spooning sugar?
The answer is operational, and it comes down to what happens in a cold cup. Sucrose, ordinary table sugar, arrives as a crystal that needs heat or long stirring to dissolve, so in an iced drink it settles at the bottom and the last mouthful tastes different from the first.
