A tze char or kopitiam kitchen sells variety. That is its whole promise: one menu, thirty dishes, one wok line. The hidden cost is that almost every one of those dishes needs its own base, and somebody has to mix, cook and standardise each one before service, every day, alongside everything else.

What is sweet and sour sauce made of?

Traditional sweet and sour sauce is built on tomato ketchup, vinegar and sugar, often rounded out with pineapple juice, then thickened with a cornstarch slurry until it coats the back of a spoon. Some kitchens swap in rice vinegar or brown sugar for depth, others simmer pineapple chunks straight into the pot, but the endpoint is the same tangy, glossy condiment. That balance of sugar against vinegar is what carries sweet and sour pork, chicken and fish.

If you are deciding which dishes earn a place on the menu, search demand is a useful proxy for appetite. Google keyword data for Malaysia, checked August 2026, shows claypot chicken rice searched around 9,900 times a month, marmite chicken 1,900, prawn mee 1,900, sweet and sour sauce 1,000 and lemon chicken 720.

Those are customers hunting for the dish, not the recipe trade. For an operator, the takeaway is plain: these are proven menu lines with standing demand, and the barrier to serving them well is a consistent sauce base, which is precisely the part you can now buy in a trade pack.

The base carries the reputation of the dish, so treat the switch like the operational decision it is. Buy one pack, not a carton. Cook the dish exactly as you would at service, same wok, same portion, same garnish. Put it next to your current version and let staff and regulars taste both. Then count the prep time the hand-mixed version costs you each week, and price those hours.

If the pack holds up, the labour arithmetic usually decides in its favour, and you have added consistency for free. If it does not hold up, you spent under RM 30.00 to find out, and your standard stays where it was. Either way the menu decision was made with evidence.
